Why I love it
I have a couple of reasons why I love this product but the biggest for me is that there’s no nasty aftertaste. I’ve found that other sweeteners leave a bitter taste in my mouth and can be noticeably grittier than actual sugar. The Classic Lakanto feels like the real deal and tastes the same too – more natural and less artificial.
I started off by trying it in my morning coffee and was impressed with how quickly it dissolved and made my drink just as sweet. I also ran a test on my iso household by swapping out our regular white sugar for the Classic Lakanto and no one could even tell the difference – not even my sugar-loving dad who spots everything!
Speaking of my iso household, since we’ve all been stuck in lockdown I’ve been baking up a storm trying to perfect my favourite sweet treat recipes. The best recipe to test the Lakanto Monkfruit Sweetener out on is this no-added sugar banana bread. This was the first thing I baked and it was delish – you couldn’t even tell it wasn’t full of sugar and the texture held up nicely. Check out the recipe below ⬇️
No Added Sugar Banana Bread
Ingredients
Ingredients
- 3 Eggs
- 3/4 cups Coconut Oil Melted
- 1/3 cups Lakanto Monkfruit Golden Sweetner
- 1 tsp Vanilla Extract
- 1 1/2 cups Mashed ripe Banana approx 2-3 med bananas
- 2 cups Almond Meal
- 1/2 tsp Ground Cinnamon
- 1 1/2 tsp Bicarbonate Soda
- 1/2 tsp Salt
- 3/4 cup Chopped Walnuts
Instructions
- Preheat oven to 170c. Grease a 9x5 inch loaf pan and set aside.
- In a medium bowl, whisk the almond meal, cinnamon, bi carbonate soda and salt. Set aside.
- In a large bowl, beat eggs, Coconut oil, Lakanto Monkfruit Golden Sweetener and vanilla for 2 minutes.
- Stir in the mashed bananas, then fold through the almond meal mixture until combined.
- Gently fold through the chopped walnuts until evenly combined throughout the mixture.
- Pour mixture into greased pan, and sprinkle with some more cinnamon or banana slices
- Bake for 50-55 minutes or until a toothpick inserted comes out clean.
- Cool for 10 minutes, slice into 8 pieces and serve
I’ve already put my money where my mouth is and bought a couple more bags from lakanto.co.nz and I’m not planning on looking back.
I picked up some of the Golden Lakanto range too in the hopes it would work as a substitute for brown sugar in a chewy biscuit I was baking and it worked a treat. While the product itself isn’t firm packed like brown sugar, in the recipe for these cookies I’ve baked a million times I wasn’t able to tell the difference. One of our editors even received these Lakanto baked cookies for her kids that came with a sprinkle of nana magic.
