Kumara and Chickpea Curried Patties

Meat free Mondays just got tastier! Ditch your beef burgers and whip together this delicious vegetarian pattie packed full of flavour. With a chickpea base and a hint of curry powder, you won’t regret making the switch.

Here are a few ways we love to eat these patties:

  • As a burger patty alternative
  • With some stir-fried veggies and some brown rice on the side
  • Over Summer, these are great with a fresh salad and a greek yoghurt dressing (mix some mint in with greek yoghurt – trust us!)

Kumara and Chickpea Patties

Ingredients

  • 1 tin chickpeas 240 grams, drained
  • 2 medium orange kumara peeled
  • 1 small red onion
  • 2 cloves garlic
  • 1 tbsp curry powder
  • 1 pinch salt
  • 1 pinch chilli powder or chilli flakes
  • 1/2 cup coriander fresh and chopped
  • 3 tbsp flour

Instructions

  • Place the peeled kumara on a plate and pierce with a fork or knife. Pop into a microwave and cook on high for 10 minutes.
  • Dice the onion and fry in a pan on medium heat with a dash of oil. After a few minutes, add the crushed garlic and continue cooking for 2 - 3 minutes.
  • Add the curry powder, salt and chilli and cook for 1 minute until fragrant. Remove from heat.
  • Drain the chickpeas and rinse with water. Roughly mash them in a medium bowl with the back of a fork.
  • Once the kumara is soft all the way through, remove them from the microwave. The next step has two options:
    a) Slice open long ways and scoop out the flesh into a bowl and mash until soft
    b) As the skin is already off, mash the entire kumara into a bowl
  • To the mashed kumara, add the the mashed chickpeas, onion mixture, coriander and flour. Mix well.
  • Take spoonfuls of the mixture and create patties (similar to what you'd put in a burger).
  • Clean the frying pan and heat some oil with a little butter. Fry the patties on each side until golden brown.
