Ingredients:
- 200g couscous
- 250ml vegetable stock, heated
- 1 tablespoon olive oil
- 1/2 cup of Broccoli
- 1 large carrot
- 1/2 onion
Directions:
- Put the couscous into a large bowl and add the heated stock. Cover and leave to soak for 10 mins.
- Stir-fry broccoli, carrots and onion in a fry pan. Add any other vegetables you like i.e. beans, capsicum, corn kernels
- Use a fork to fluff up the couscous then add the vegetable mixture. Toss together and serve.
