Creamy mushroom soup

Makes 6 servings

Prep: 5 min                 Cook: 20 min                 Ready in: 25 min

Ingredients:

  • 1x pack of mushrooms or 8 mushrooms
  • 1/2 onion, chopped
  • 1-2 garlic cloves, minced
  • 2 tablespoons butter
  • 2 cups chicken stock
  • 1 cup cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg

Directions:

  1. Slice mushrooms and onions. Mince garlic.
  2. In a large frying pan, melt butter and add in onions, garlic and mushrooms. Cook until soft.
  3. Add in chicken broth and heat until slightly thickened, stir frequently.
  4. Mix cream and seasonings in a bowl. Add to soup and heat until thickened.
  5. Blend to combine.

If you like your soup a little thicker, add in a tablespoon of flour after step two.
