Cheesy vegetable bake

Serves 6

Prep: 15 min                 Cook: 40 min                 Ready in: 55 min

Ingredients:

Vegetable Bake

  • 4 potatoes
  • 1 large sweet potato
  • 2 large carrots
  • 1 red onion
  • 1 broccoli head
  • Any other vegetables you like: Capsicum, beans, pumpkin, cauliflower

Cheese Sauce

  • 2 tablespoons soft butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 cup grated cheese

Directions:

  1. Preheat oven to 200°C /180°C fan-forced.
  2. Place all vegetables on a baking tray, drizzle with oil and salt and roast for 20 – 30 minutes until almost cooked through.
  3. While the vegetables are roasting, prepare the cheese sauce.
  4. Melt butter in a saucepan. Add the flour and stir with a whisk for a minute. Remove from the heat and whisk in the milk. Return to heat and stir until sauce thickens; add cheese until it melts.
  5. Transfer roasted vegetables into a baking or casserole dish and pour over cheese sauce. Cover in additional cheese.
  6. Bake in the the oven for another 10 minutes or until cheese is golden and crisp.
