Apricot ice-blocks

Makes 4-5 ice-blocks

Prep: 10 min                 Cook: 5 min                 Ready in: 15 min

Ingredients:

  • 2 cups water
  • 2-3 medium apricots, skinned and diced
  • 3 tablespoons honey
  • 1 lemon freshly squeezed
  • Ice-block sticks

Directions:

  1. Combine the water, apricots, honey, and lemon juice in a blender and puree until smooth.
  2. Pour mixture into mould and freeze for one hour.
  3. Add the sticks to the moulds and freeze for 4-6 hours, or overnight.

Tip: add an apricot slice to each mould
