Get your summer party started with these 4 delicious cocktail recipes to keep everyone going – bring on the cosmos!

Cosmopolitan

Ingredients:

  • 1/2 lime, chopped
  • 30mL vodka
  • 60mL cranberry juice
  • 10mL lime juice
  • Crushed ice
  • Orange zest

Method:

Muddle (I believe this is the appropriate verb for this task) chopped lime in glass. Pour vodka, cranberry juice and lime juice into glass. Top with crushed ice and orange zest.

Peach bellini

Ingredients:

  • 2-3 white peaches
  • Lindauer or sparkling white wine

Method:

Blanch 2-3 fresh white peaches in hot water, remove skins and stones.

Blend peaches and fill glasses to one-third with peach puree.

Carefully top with prosecco or sparkling white wine.

Bellini’s are traditionally served in small tumblers, but a champagne glass is fine.

Sparkling raspberry crush

Ingredients:

  • 250g raspberries
  • Juice of one lemon
  • 1/2 cup caster sugar
  • 1 tablespoon brandy
  • Champagne or sparkling white wine to serve

Method:

Blend raspberries, juice of a lemon, caster sugar and brandy in a food processor.

The puree should be shiny and all the sugar crystals dissolved.

Press through a course sieve to remove the seeds (this is a bit tedious, but do persevere). Store in a glass jar in the fridge.

To make the cocktail, spoon two teaspoons of raspberry puree into a champagne glass, carefully pour in sparkling white wine or champagne.

Champagne cocktail

Ingredients:

  • 1 sugar cube
  • A splash of Angostura Bitters
  • A splash of Brandy
  • Champagne or sparkling white wine

Method:

In a champagne glass, soak the sugar cube in Angostura Bitters, add a splash of brandy and top with champagne or sparkling white wine.

    Love cocktails!! I have a girlfriend in town from Wellington for a couple months before she heads to Melbourne so we are definitely going to go for a night out of cocktails and dancing!! 🙂
