Lentil and halloumi mason jar salad

Get a little hipster with your salads and serve it up in a mason jar. Perfect for work lunches, you can prep this salad on a Sunday afternoon, ready to kickstart the week.

Serves 1

Prep: 10 min                 Cook: 5 min                 Ready in: 15 min

Ingredients:

  • 1 cup of lentils (tinned or cooked)
  • 1 cup lettuce or spinach
  • 1 tomato
  • ½ capsicum
  • ½ cup red onion
  • ½ avocado
  • ¼ cup halloumi, fried

Directions:

  1. Fry halloumi in a little butter or coconut oil until golden on both sides.
  2. Place lentils in the bottom of the jar and layer salad ingredients. Top with Halloumi
  3. Optional: add salad dressing to the bottom of the jar.

    Love how fresh this salad rainbow looks. Seems like very quick prep time too. I’ve only ever had lentils in a soup, must try this!
