Ingredients:
Vegetable Bake
- 4 potatoes
- 1 large sweet potato
- 2 large carrots
- 1 red onion
- 1 broccoli head
- Any other vegetables you like: Capsicum, beans, pumpkin, cauliflower
Cheese Sauce
- 2 tablespoons soft butter
- 2 tablespoons flour
- 1 cup milk
- 1/2 cup grated cheese
Directions:
- Preheat oven to 200°C /180°C fan-forced.
- Place all vegetables on a baking tray, drizzle with oil and salt and roast for 20 – 30 minutes until almost cooked through.
- While the vegetables are roasting, prepare the cheese sauce.
- Melt butter in a saucepan. Add the flour and stir with a whisk for a minute. Remove from the heat and whisk in the milk. Return to heat and stir until sauce thickens; add cheese until it melts.
- Transfer roasted vegetables into a baking or casserole dish and pour over cheese sauce. Cover in additional cheese.
- Bake in the the oven for another 10 minutes or until cheese is golden and crisp.
