Simple couscous salad

Serve: 4

Prep: 10 min                 Cook: 15 min                 Ready in: 25 minutes

Ingredients:

  • 200g couscous
  • 250ml vegetable stock, heated
  • 1 tablespoon olive oil
  • 1/2 cup of Broccoli
  • 1 large carrot
  • 1/2 onion

Directions:

  1. Put the couscous into a large bowl and add the heated stock. Cover and leave to soak for 10 mins.
  2. Stir-fry broccoli, carrots and onion in a fry pan. Add any other vegetables you like i.e. beans, capsicum, corn kernels
  3. Use a fork to fluff up the couscous then add the vegetable mixture. Toss together and serve.
