Barbeque skewers: vegetarian or meat options

Makes 12 – 20 skewers depending on how full you make them

Ingredients:

1 pack of skewers

Meat:

  • 500g chicken or lamb, diced into cubes
  • 1 onion
  • 2 capsicums – yellow and green
  • 1 punnet cherry tomatoes
  • 1 zucchini
  • 1 tin pineapple chunks

Optional: add prawns and hallouni

Vegetarian:

  • 1 onion
  • 2 capsicums – yellow and green
  • 1 punnet cherry tomatoes
  • 1 zucchini
  • 1/2 eggplant
  • 12 mushrooms, halved if large
  • 1 tin pineapple chunks

Optional: add halloumi

Honey sesame marinate:

  • 1/2 cup salt-reduced soy sauce
  • 1/4 cup honey
  • 1 tablespoon piece fresh ginger, grated
  • 1 garlic clove, crushed
  • 1 tablespoon sesame seeds

Directions:

Skewers:

  1. Soak skewers in water for 5 – 10 minutes so they won’t burn on the BBQ
  2. Line skewers with your preferred ingredients (meat or vegetarian)
  3. Coat in honey sesame or preferred sauce
  4. Fire up the grill and cook until golden or meat is cooked through

Sauce:

  1. Combine soy sauce, honey, ginger, sesame seeds and garlic in a bowl.
  2. Coat completed skewers in sauce before grilling
