Serves 4
Prep: 10 min Cook: 45 min Ready in: 1 hour
Ingredients:
- 4 chicken thighs
- 1 tablespoons olive oil
- 6 tablespoons orange juice
- ½ teaspoon ground ginger
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 tin of diced tomatoes
- 1 Capsicum sliced or diced
- Orange slices
Directions:
- Preheat oven to 200°C
- Line oven dish and lay out chicken pieces and capsicum.
- Mix together oil, orange juice, ginger and seasonings. Pour over chicken and toss to coat.
- Lay an orange slice on top of each piece of chicken.
- Roast in preheated oven, uncovered for 30 minutes.
- Remove and cover in tomatoes. Return to oven and bake for another 10 minutes or until chicken is cooked.
This sounds really yummy, and so easy! I will be making this!!

Yum! My mouth is watering! This would be good no matter the season, but I’m seeing it during BBQ season with side salads
