2mediumorange kumarapeeled
1smallred onion
2clovesgarlic
1tbspcurry powder
1pinchsalt
1pinchchilli powder or chilli flakes
1/2cupcorianderfresh and chopped
3tbspflour
Instructions
Place the peeled kumara on a plate and pierce with a fork or knife. Pop into a microwave and cook on high for 10 minutes.
Dice the onion and fry in a pan on medium heat with a dash of oil. After a few minutes, add the crushed garlic and continue cooking for 2 - 3 minutes.
Add the curry powder, salt and chilli and cook for 1 minute until fragrant. Remove from heat.
Drain the chickpeas and rinse with water. Roughly mash them in a medium bowl with the back of a fork.
Once the kumara is soft all the way through, remove them from the microwave. The next step has two options:a) Slice open long ways and scoop out the flesh into a bowl and mash until softb) As the skin is already off, mash the entire kumara into a bowl
To the mashed kumara, add the the mashed chickpeas, onion mixture, coriander and flour. Mix well.
Take spoonfuls of the mixture and create patties (similar to what you'd put in a burger).
Clean the frying pan and heat some oil with a little butter. Fry the patties on each side until golden brown.
